What's for dinner today? I'm strapped for time so I'm always looking for something quick and easy. Today, I went to the good ol' fried rice...of course, making it a healthier version than my mom did while I was growing up. That's right -olive oil instead of pork fat; chicken breast instead of Chinese pork sausage; and the kicker -brown rice instead of white!
It turned out pretty well if I do say so myself. I gobbled it all up and back to my laptop to work...boo!
1 clove garlic
1/3 cup onions
1/2 tbs olive oil
1 tsp sesame seed oil
5 tbs soy sauce
1 4-6 oz chopped chicken breast (salted, peppered and splashed with a bit of soy sauce for about 30 min)
1 lrg egg
1/3 cup frozen peas
1 stalk green onion chopped
1 bag of Trader Joe's frozen pre-cooked brown rice (comes 3 in a pack)
Salt/Pepper to taste
1. Sweat the onions and garlic in the olive oil (sesame seed oil burns too quickly)
2. Add chicken and cook chicken all the way through.
3. Add frozen rice and cook thoroughly and add the sesame oil
4. Create a hole in the middle of the egg/chicken add the egg, and scramble. Stir continuously to cook the egg and incorporate into the rice.
5. Add soy sauce and peas, and give it one good stir.
6. Turn off the heat and add the green onions.
7. Plate, serve, eat and enjoy!!
*I also added some Sambal chili to the top of my bowl because I like it spicy!

I just made this, delicious! Of course I made enough for six servings, eat it throughout the week.
